Cauliflower bites always remind me of chicken bites...but healthier! Enjoy these crispy bites with your favorite sauce, like BBQ, blue cheese, caesar or ranch.
I try to stay as dairy free as I can so for my blue cheese, caesar, and ranch dressings, I use a company called Daiya. They are dairy, gluten, soy, and egg free.
To reheat cauliflower bites...do NOT use the microwave! This will make them soggy and cook out the nutrients. Reheat in oven or toaster oven to get the crispiness back.
Now to the recipe...
Yield: about 2 entrees or 4 appetizers
Cook time: 30 minutes
INGREDIENTS
1 medium sized cauliflower
1 cup flour + 3 tablespoons flour
1 1/2 cups breadcrumbs (maybe more if necessary)
1 cup milk of choice (maybe more if necessary)
2 teaspoons Paprika
1 teaspoon Turmeric
2 teaspoons dried oregano (or other dried herb of choice)
2 teaspoons seasoning salt (optional)
1 teaspoon Himalayan Sea Salt
1 teaspoon ground pepper
INSTRUCTIONS
1. Preheat oven to 400F.
2. Destem cauliflower and chop into small florets. Make sure the florets are small enough for bite-size pieces, anything larger won't come out right.
3. In a medium bowl, combine 1 cup flour, 1 cup non-dairy milk, and half of the spices [so 1 teaspoon of each]. Mix until well combined. Mixture should be like a thin pancake batter. If too thick, add more milk.
4. On a large plate, add half the breadcrumbs and 3 tablespoons flour, as well as the remaining half of the spices. Use a fork to combine.
5. Put cauliflower florets into a large bowl and pour the wet mixture over the florets. Using a spoon or your hands, toss to combine so that every floret is coated in the wet mixture.
6. Using clean hands, take each floret and dredge it through the dry panko breadcrumbs mixture and place it on a lined baking sheet.
**NOTE: About halfway through, the breadcrumbs will become soggy and no-good. Throw them away and replenish with the remaining half of your breadcrumbs, more spices, and more flour. Continue until all cauliflower is on your baking sheet.
7. Cook cauliflower for 15 minutes. Take the cauliflower out and turn/flip it.
8. Cook for 15 minutes more and remove from the oven when the breading is golden brown.
9. Enjoy!
