Raspberry Clafoutis





This healthy raspberry clafoutis has the texture of a pancake, chunks of raspberries but not terribly sweet. This dessert or snack is easy to make with simple ingredients you probably already have in your kitchen.



INGREDIENTS

3 large eggs, lightly beaten

1 cup unsweetened almond milk

2 tablespoons honey

2 tablespoons vanilla extract

1/2 cup oat flour

1 (10 oz) bag frozen raspberries, defrosted and drained (or 2 cups fresh)




INSTRUCTIONS

  1. Preheat oven to 350 degrees F.

  2. Coat a pie or cake pan with avocado cooking spray (or alternative).

  3. In a medium bowl, whisk together eggs, almond milk, honey, and extract.

  4. Add oat flour and whisk until combined.

  5. Arrange your raspberries in an even layer in the pan. Pour mixture over raspberries.

  6. Bake for 25-30 minutes, or until a toothpick comes out clean. Set aside to cool for about 30 minutes.

  7. Cut into pieces and enjoy!



**Alternatives: use other fruits! I made another with blackberries and it was just as delicious.
