Strawberry Oat Bar Recipe


A healthy breakfast, snack, or dessert...these easy & healthy strawberry oat bars curve your sweet tooth craving and leave you feeling guilt free and satisfied.


I am always on the hunt for dessert-like recipes that are healthy because I have a HUGE sweet tooth. If it’s in the house, we eat it, so we forgo buying the ice cream and cookies (no matter how bad we want it). We find the healthy alternatives instead and this one is definitely at the top of our list!

Side note: this recipe called for unsalted butter but I only had salted butter. Solution? Skipped the salt called for in the recipe and used salted butter instead. Turned out great!


Healthy Strawberry Oat Bars


INGREDIENTS

1 cup rolled oats

¾ cup all-purpose flour

½ cup light brown sugar

Pinch of salt

½ teaspoon ground ginger

8 tablespoon unsalted butter, melted

1 teaspoon cornstarch

2 cup fresh or thawed strawberries, small-diced

2 tablespoon lemon juice


INSTRUCTIONS

1. Preheat oven to 375 degrees. Line an 8x8 inch baking pan with parchment paper.

2. In a large mixing bowl, mix together the oats, all-purpose flour, light brown sugar, ginger and salt.

3. Pour into the melted butter and mix until all of the oats are moistened and the mixture is thoroughly combined.

4. Reserve ½ cup of the oat mixture.

5. Press the remaining oat mixture into prepared baking pan.

6. Spread the strawberry on top of the oat mixture, then sprinkle the cornstarch evenly over the top, then sprinkle the lemon juice.

7. Reserved ½ cup oat mixture, crumble this over the strawberry on top.

8. Bake for 25-30 minutes, until the crumbs looks golden.

9. Allow to cool completely before cutting into bars.

10. Makes 9-12 bars, depending how large you cut them.
