
These meatloaf muffins take half the time in the oven compared to a whole meatloaf. Recipe calls for only 1lb of beef. We use 100% grass-fed beef. For less sugar (which is always what you want to stay healthier), use a ketchup substitute or a low sugar organic ketchup.
Yield - 2 servings
Cook time - 35 minutes
INGREDIENTS -
1lb 100% grass-fed beef
1/3 cup dry oatmeal
1/3 cup parmesan cheese or non dairy substitute (we use non dairy cheese)
2 free ranged eggs
1/4 cup ketchup (less sugar substitutes: tomato salsa, tomato paste, apple cider vinegar, sun-dried tomato hummus, mushroom sauce)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Several shakes of Worcestershire sauce
1-2 handfuls of veggies (onions, mushroom, carrots, zucchini, chopped broccoli, spinach, kale)
INSTRUCTIONS -
Preheat oven to 350 degrees F.
Mix all ingredients in a large bowl until combined, using only 1/4 of ketchup/substitute.
Press the meat equally into muffin tin. Top with ketchup. I also sprinkle some parsley on top.
Bake for 30-35 minutes. Let cool and enjoy!
