Ingredients -
Pumpkin Spice Simple Syrup:
1 cup raw sugar
1/2 cup water
1/4 cup pure pumpkin puree
2 tsp pumpkin pie spice
Pumpkin Spice Latte:
1 hot cup of your favorite coffee
1 tsp coconut oil
1/4 cup unsweetened vanilla almond milk
2 tsp Pumpkin Spice Syrup (or to taste)
Instructions -
To make the Pumpkin Spice Syrup:
In a small pot over low heat, combine all ingredients, stirring occasionally until sugar is fully dissolved.
Remove from heat and let cool. If you want this to be thicker (more like a pancake syrup) then let it come to a bubble and it'll thicken in just a couple of minutes.
Once cooled, strain through a fine sieve and refrigerate.
To make the Pumpkin Spice Latte:
To a blender, add the coffee, coconut oil, almond milk, syrup.
Blend for 15-20 seconds.
Pour into your favorite mug, sit back, relax and enjoy!
